Some days ago my fridge was overloaded with apples! Sadly I am allergic to apples, so I can't eat them as long as they not baked. So there was only one solution...bake them! But what to make? This time I chose something simple, an apple cake.
To be honest, all these years I thought that I wouldn't like apple cake. So everytime my mom baked apple cake I wouldn't taste it and eat chocolates instead. Till one day I decided to finish the apples in my mom in laws fridge...and guess what? It's delicious!
So here comes the recipe:
5 tablespoons sugar
1,5 tablespoons cinnamon
200 grams butter (room tempered)
200 grams sugar
170 grams all purpose flour
1 teaspoon baking powder
Peel and cut apples into slices. Put in a ziplock bag and add sugar and cinnamon. Shake well and put aside.
Beat sugar and butter til it gets lighter and fluffy.
Bake in oven at 180 Celsius degree for about 50 minutes.
(It's finished when the toothpick or knife comes out without any batter on it.)
We often serve it with vanilla ice while its still a little warm, you can also serve it with Vanilla sauce/custard. Or just have it plain like it is with a nice cup of tea.
I found this recipe ages ago at melk.no, but i prefer using a little less cinnamon then what their recipe calls for.
